7 1 and 3/4 cups (207g) cake flour* (spooned & leveled)
8 3 and 1/2 teaspoons chai spice mix (above)
9 3/4 teaspoon baking powder
10 1/4 teaspoon baking soda
11 1/4 teaspoon salt
12 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
13 1 cup (200g) granulated sugar
14 3 large egg whites, at room temperature*
15 2 teaspoons pure vanilla extract
16 1/2 cup (120g) sour cream or plain yogurt, at room temperature
17 1 and 1/2 cups (340g) unsalted butter, softened to room temperature
18 5.5 – 6 cups (660-720g) confectioners’ sugar
19 2 teaspoons chai spice mix, divided
20 1/4 cup (60ml) heavy cream
21 2 teaspoons pure vanilla extract
22 pinch of salt
23 optional for garnish: cinnamon sticks + mix the remaining chai spice mix
